Traditionally, monks have been involved in honey production since ancient times, as honey is a staple food especially on fasting days observed in the monastery, and as an accompaniment to tea served to the countless pilgrims at the monastery’s guesthouse. The bee populations belong to the local breed. They feed exclusively on the rich and unpolluted flora of Mount Athos, which due to the ideal weather conditions prevailing, consistently provides them with their food, with flowering coverage almost throughout the year. Bee migrations are minimal and short-distance, so the bees are not stressed or troubled in unknown locations. The queens are bred in our monastery with meticulous care, enjoying the warmth of the serene nature. During winter, the bees are rewarded with large quantities of their honey, ensuring their strength until the next spring, accepting their low but steady production.
